Activating photo mode is simple. By default, the photo mode is mapped to Up on the D-pad on Xbox or P on the computer. You can press that button whenever you are driving. From here you have several options. You can take photos with the push of a button. There are also controls for adjusting focus, applying visual effects, and even undoing cosmetic damage. If you just want a quick shot, then this is all you need. After you take the picture, it will go through a quick processing and you will see a prompt to save the final picture.
