Jeff Baker explained that using a grill or oven is “the road to bad sausage.” The first problem, uneven cooking: The intense, direct heat of the grill can cause sausages to cook unevenly, with some parts burned on the outside and others undercooked on the inside. Second, when you grill sausages, there is a greater risk of losing juice and flavor, especially if you skewer them beforehand. This can result in dry sausages with less flavor. Lastly, bad caramelization: According to Jeff Baker, the fat in sausages needs to be rendered and caramelized for the best flavor. This technique is not possible on the grill, which can compromise the flavor and texture of the sausages.

The head chef shared his method for making the “perfect” sausages. According to Jeff Baker, you should always cook hot dogs in a skillet, and never pierce them too early. If you do, the juice will run out, leaving them dry. It is best to use a nonstick skillet over low to medium heat. “Simmering them for a long time will cook them well, so the fat melts and caramelizes in the pan,” he says.

“By turning them regularly, you make sure the sausages have a nice golden color,” he says. Jeff Baker recommends 10-12 minutes to cook a thick traditional sausage and a teaspoon of duck or goose fat.
