Nikki King Bennett in Netflix’s Bad Vegan
Netflix’s Bad Vegan: Gloria. Fraud. The Fugitives was released on March 16, 2022, which saw Sarma Melngailis rise to fame with her journey with Pure Food and Wine. But that was not all. The show also looked into the lives of the people who were also instrumental in its creation, including executive chef, Nikki King Bennett.
Immediately after graduating in 2008, Nikki joined Pure Food and Wine and it wasn’t long before she was promoted to executive chef. She recalled that the restaurant was ahead of her time at the time, providing a premium vegan experience like no other. And thanks to this, she even got the chance to cook for celebrities like Stevie Wonder, Janet Jackson, Tom Brady, and Gisele Bundchen, among others.
But what looked like a successful restaurant on the outside hid its problems on the inside. In 2014, employees began to leave because Sarma did not pay their salaries and, moreover, was nowhere to be found. However, that situation was quickly resolved and the restaurant returned to normal.
But just when Nikki thought everything was going to be okay, the situation happened again in January 2015. Then, feeling nothing had changed, Nikki King resigned from the restaurant, ultimately leading to the restaurant’s closure.
As for Sarma’s side of the story, she blamed it all on her ex-husband Alec Baldwin. She said that during their relationship she lent him huge amounts of money that he never repaid.
She also added that he assured her that she would be “empowered in ways that (she) couldn’t have imagined.” He made her dream of all the “things that would change the world” that she had been silently dreaming of.
Unfortunately, Sarma’s dream remained a dream forever.
Nikki King Bennett Business Today
Nikki King Bennett is now the owner of Mostly Vegan, a plant-based restaurant founded in May 2012. Her company offered services such as “Menu + Recipe Development, Kitchen Operations, Catering + Events, Training + Education, and Content Development” .
He reportedly opened Mostly Vegan four and a half years after leaving his job at Pure Food and Wine. And for those 4 1/2 years, she worked as the head chef at Plantable in New York.
A vegan from a very young age, Nikki learned how nutrition changed her “health and happiness.” So she wants the world to “taste” her philosophy and experience all things raw, vegan and vegetarian. To that end, she weaves her creativity and innovation to elevate the typical dining experience, keeping things simple and making sure food tastes good.
As for her inspirations, Nikki said she was inspired by the seasons; especially when she was walking in the market. “I anticipate every change in temperature and the resulting change in flavor, color and mood,” she explained. But out of all of them, her favorite seasonal ingredient to cook with would be butternut squash.
To her credit, this talented vegetable chef was also named in the 2013 Best Chefs America book. Additionally, her food was featured on The Today Show.
As for education, he went to the Natural Gourmet Institute.
