2nd season American showdown with barbecue it’s finally here. The Netflix food competition series debuted in September 2020 and followed “the best backyard smokers and competitive grillers as they compete for the title of America’s Grilling Champion.”
According to the series synopsis, each episode has a task that puts the contestants to the test of the art of barbecuing in ways they “could never have imagined. From unique meats to old school techniques, one day they’ll have to prove they’ve got smoking skills.”
This year’s competition was joined by Thyron Mathews, the founder T & T grill.
According to the business website, “It all started when me, Thyron Mathews (T) and my uncle Ced came together with a passion – to make the best barbecue there is. With over 50 years of experience, we bring my family recipes to all parts of Iowa.”
Thyron has been grilling for 28 years. He grew up grilling on a farm in Florida. Its importance to him only became clear to him during his studies at Upper Iowa University in Fayette when he found himself correcting a chef. When Thyron joined the barbecue crew for the university’s spring barbecue, he was hired by Sodexo Marriott, the company contracted to provide food services at UIU. He found himself criticizing a barbecue chef employed by UIU.
He started cooking on the Fayette campus with a contractor.
Thyron soon became friends with Torie Handson. Driving through Oelwein with Torie, Thyron found his first barbecue. The boys worked odd jobs to pay for it before they started cooking around town, but they didn’t make much money. In addition, they prepared meals for gatherings of Greek houses and recent alums.
Thyron and Torie composed the original initials of T&T BBQ. T&T BBQ and Catering LLC Oelwein Chamber and Area Development named it Community Promoter of the Year late last year.
The caterer also started applying for tenders. He won his first major barbecue championship trophy at NewBo City Market in Cedar Rapids in 2013, competing against a $20,000 grill that Iowa welder Jason Belden helped him assemble from a container donated to Thyron.
After the trophy in Cedar Rapids, Thyron was “bitten by the bug.” Since then, he has won 31 additional championships. This includes two consecutive years as “Best in Show Iowa Barbecue” at the 2018 and 2019 Iowa State Fairs.
“I don’t play around when it comes to my food,” Thyron said. “I have the same respect, whether it’s a benefit or a wedding, … I cook better when I cook for other people than when I cook for myself. I believe that my barbecue is remembered by the last thing you try, so every time I give you something, I want to make sure it’s the best portions, quality and quantity, and I always buy the best meat I can afford.”
Thyron works as the warden of the Fayette County Jail. In June 2022, Sheriff Marty Fisher celebrated him for 20 years of dedicated service. He was named Community Promoter of the Year by OCAD and served as an ambassador for Oelwein.
Spoilers ahead: Thyron “Big T” Mathews and Logan Sandoval are the two remaining competitors at the conclusion of the competition. To decide who wins, the final two pitmasters must go “whole hog” and serve feasts from snout to tail. Thyron Mathews eventually triumphs and is crowned the newest Barbecue Showdown Champion.
The winner walked away with $50,000.

Thyron Mathews originally started barbecuing because of his family. His mother, Mrs. Palestine Morgan, was a cook who gave him recipes that had been passed down in the family for generations. His father, Thyron Mathews Sr., owned a watermelon, cantaloupe and squash farm in Florida. “Treat every person as if they were the most important person in the world,” the golden rule of business engraved into his business was inspired by his father Thyron Sr. Thyron Sr. is no more.
He had a humble beginning in his Florida. The barbecue was the center of social life. The work is divided among the families. They grilled meals for the farm staff and sold them to finance their wages. His relatives would leave him to look after the pit while they did the work, so that the food wouldn’t burn.
“My story, I don’t take things for granted. People go through all kinds of things, and this is what is written in your heart… You give and believe that God will give you back. And it does,” he added.
Wife of Thyron Mathews
Thyron Mathews is married to his wife Terrishana “Terri”. At Upper Iowa University, the chef met his future wife. He helped her use the waffle maker and they started talking. Then Terrishane volunteered to work as “free help” in Thyron’s kitchen.
Thyron and Terrishane were married on December 31, 2001.
In January 2018, Terri wished her husband on their anniversary, writing: “After all these years he still makes me laugh. He still makes me feel safe, he still makes me feel butterflies in my stomach because he’s my ride or die He’s my everything. I thank God for him every day. Happy anniversary to my husband of 16 years.”
The couple has three children: one daughter Gladice Mathews (19 years old) and two sons Dallas and Thyron III (18 years old).
They relaunched T&T BBQ, now represented by Thyron and Terri, and lived briefly in West Union and continued to cook or “cook” for friends and family, moving to Oelwein in 2004 and moving within the city in 2018.
They offer the “total barbecue experience,” promoting local businesses through purchase from them and word of mouth – such as Fareway, Dollar Fresh, Fairbank Locker and Processing and Kerns Homegrown – and supporting local causes by cooking for fundraisers – such as Fayette County First Aid and the Iowa State Patrol, Oelwein Little League, Oelwein Dollars for Scholars and MercyOne Oelwein Medical Center.
“Me and my wife are honored when we’re mentioned as doing things like this,” Thyron said during an interview in 2021.
Terrishane was born in 1982 and is 41 years old. She previously worked as a repair specialist at Four Oaks.
